I love ice cream, but it doesn’t always love me back. It’s a complicated relationship, but I’ve found a new friend who’s willing to love me just the way I am. It’s a dairy free and almost sugar free ice “cream”. There are only four ingredients and you’re most likely to have them all in your pantry. It’s also a good way to use up some bananas that you have sitting around. Note the flavor of the ice “cream” is impacted on how ripe your bananas are. Mine were soft and borderline banana bread territory, so the flavor was very banana-ey.

1 Tbsp honey
And as Jamie Oliver would say, “Waz it up!” There was a point before the ice “cream” came together that I thought this recipe wouldn’t work, everything looked a bit chunky, weird and scary. Soldier on! Because in no time it will look like this:
Smooth, creamy, delicious! It’s really satisfying, filled me up and kept me satiated for quite awhile. There was no sugar crash or tummy ache. Victory! Some yummy toppings would be salted peanuts, or if you want to be naughty, some chopped dark chocolate would be heavenly. Enjoy!
